How to make up EXTRACURRICULAR ACTIVITIES soon in time?

My trouble is based on this section in common application, where I am forced to speak out loud about some life achievements of mine which, unfortunately, I do not have many.

This June I have graduated from high school in US, but overall I am a student from Europe. I have decided to continue my education in U.S, but the system of applying to colleges is way different here. Colleges in U.S definitely care more about things that make up a student besides of one’s grades - and at this point, that put me into a very bad situation.

The one huge “activity” that I was a part of in my life was Music School, which from I have graduated after 6 years. In my country I did not have many activities for people in my age to be involved in, because I was approx. 13 years old and already raising up my interests in Economics. Also, I was not able to have any job or even non-profit job before 18 years old (this is how stuff in my country works), so honestly, shortly - I did nothing special besides of Music School to put into my college application as extracurricular activities.

My question, in few words is - how can I make this up? Now I am 18 years old and I do have a non-profit job (because I do not have any experience with this kind of job) in a corporation and in an accounting office. I wanna apply for Economics in college. Can you tell me if those non-profit jobs or extracurricular courses for people interested in Econ/Finances etc etc will work as my extracurricular activities?
