How will my extracurriculars be viewed on a resume?

I’ve been trying to build up my profile by being engaged in a variety of extracurriculars, but I’ve been trying to keep them somewhat focused as well so I don’t seem completely scattered. I just want to get some opinions about how my activities will probably be viewed by an admissions officer. Here are the biggest activities I do:

Japan Bowl WI, possibly national in DC if I qualify
Youth Intern at Japanese Concordia Language Village
Hospital volunteering in a joint therapy session
Model UN conference in Milwaukee
Black belt martial artist of 7 years
Amnesty International elective at my high school
Varsity cross country

A resume or a school application? Most competitive colleges consider ECs to varying degrees. Most non-competitive colleges don’t even consider them.
