@Consolation, care to share the recipe for cucumber dill sauce? I’ve been looking for one for years.
@FlyMeToTheMoon I’ve been using some variation on the recipe in Martha Stewart’s first book, Entertaining, for decades.
I cup homemade mayonnaise
1 cup sour cream
1 tablespoon Dijon mustard
1 tablespoon lemon juice
1/2 tsp coarse salt
1/4 tsp freshly ground pepper
1/2 cup fresh snipped dill
1/4 cup finely chopped fresh chives
A) She calls for two large cucumbers, peeled and seeded. I use a big European cucumber–the kind that comes in plastic, because it is not waxed, seeded but not peeled. I like the color. Of course, if you have access to unwaxed farmer’s market cukes, that’s good too.
B) You can omit the homemade mayo and use Hellman’s if you are not up for making mayo or concerned about the raw egg thing. You can also just use more sour cream, but the mayo is better.
Grate the seeded cucumber in a bowl, add everything else, and mix. This amount serves 12.

@FlyMeToTheMoon , I forgot to say that you coarsely grate the cucumber on the side of the box grater with big holes, or with the shredding disc on a food processor.

SIL made it for my D’s grad celebration. Oh my, it’s sooooo good. Kind of like a coffee cake meets New Orleans King Cake meets bread pudding.
I’m serving it as desert. Maple sauce or caramel?

The recipes in the Ottolenghi cookbooks always look great, though, if they are vegan. There are also many wonderful Indian vegetable dishes that–I assume, I don’t know all the technicalities–are vegan.
Recently had this a few times. It is Just So Good!! The only problem, as Bourdain says, is that one person could easily eat the whole head for dinner. ![]()

^^^My H suggested a similar dish–he’s the cook–I’m just a helper–a whole roasted cauliflower with romesco. We’re having 8 people and he suggested making 2 whole roasted cauliflower dishes. It might be fun to do the one you posted and the one with romesco. There’s a spring salad in Plenty More (Ottolenghi) that H is also going to make.

My kid makes a great vegan mac & “cheese” with butternut squash and nutritional yeast that vegans love. Let me know if you want the recipe. There are plenty when you google as well.
