I know that if you get rejected from HAAS you have to take another major of your choosing, but do I start this other major AFTER I get rejected from HAAS, meaning I attend college a bit longer? Or do I start this backup major asap?

You can take the prerequisites for more than one major in your first four semesters (during which you will probably take about 16 courses). The business major requires 7 prerequisite courses, 2 of which are reading and composition courses that all L&S students need to take (unless they have appropriate AP or IB credit), and some others of which (e.g. economics, math, statistics) can be applicable to other majors.

If you wait until too late, you may find your registration blocked if you cannot declare a major before your fifth semester, if you are in the College of Letters and Science: http://ls-advise.berkeley.edu/major/declare.html
