I’m in a visual technology class which has an upload to a YouTube channel daily for the morning show and weekly for a kind of variety (?) show. It’s technically an out of school activity as our YouTube channel isn’t handled by the school, and I do/did a lot of editing outside of school, but all skits and news segments are approved by my teacher, so I’m not sure if it counts as an “activity” or just a class? Or if the YouTube channel and editing counts and the class itself doesn’t so just my adobe certifications don’t count?
TLDR: YouTube channel for student run morning show can be reported as activity, or no?
Other option I’m considering: Report morning show host as one activity and report the class and solo/group weekly shows as another one (I feel like this would just make my apps feel padded so idk)

As to whether an activity is through school or outside has little significance - it’s an activity. Whether it should be on your application or not, I can’t say - is it significant? If it is an assignment of the class, then I would not list it.
It is OK to report something as an activity even if it is connected to a class you are taking. For example, both my kids reported their school orchestra participation as an activity on their college applications, even though orchestra is also a high school class. Orchestra involves activities that are outside of the class period (instrument practice, performances, fundraisers etc)… but more important, this was a very meaningful activity and important community for both kids, as well as something they planned to continue in college (either as pure extracurricular or in a credited ensemble class).
So I would ask yourself the question: is this a meaningful activity to you? If so, go ahead and report it. Colleges want to know how these activities matter to you, what you feel you have learned, and what impact you have had on others.
On the other hand if you feel it is nothing more than a class assignment to you, and by reporting it you are just trying to find something to fill a slot on the app, that would feel more like “padding” and I would look for an activity that is more personally meaningful to you.
