How much worth do STEM degrees actually hold? in terms of jobs and money. For example, those that have good jobs within physics usually hold a phd, so is simply having a bachelor’s not worth it or not enough?

Maybe an Engineering bachelor’s has the most value in terms of money and job prospects.
