Independent Major - worth it?

I’m about to be a 3rd-year and thinking of changing my major. I declared Psychology pretty early and while I am still really interested in the theory of it I need it to have some application to what I want to do with my life. I would like to somehow connect it with Political Science and create an independent/interdisciplinary major, which is possible at my school but the problem is I am not sure if it’s worth it; especially since I am an international student.
How are independent majors viewed by grad-schools and employers?
I want to go into Journalism, preferably.

Not sure about Journalism, but most US Grad. Schools and employers will look at the transcript and coursework/performance, not just Degree/Major.

explain this more in depth please
