Do college interviews help in the admissions process? Is it easier to get in early decision or regular decision?

It has been shown that “early decision” options yield higher acceptance rates, but this is natural because colleges look for students that REALLY want to go to their university, and by applying early, this is essentially what you are saying. As for interviews… as long as you are not a really boring or shy person, they do not hurt. I wouldn’t say they are pivotal, but do they help…perhaps.

More importantly, the ED and RD applicant pools are quite different. The ED pool is highly self-selecting, with a high percentage of applicants who would have been admitted RD. The RD pool includes many more “reach” apps because so many can be sent to many schools, but only one “reach” app can be sent at ED time, making the ED acceptance rate appear higher for such apps.
