According to UC Statfinder (link below) the admit rate for students of your ethnic background, GPA, and overall SAT test score for 2009 was the following:

UC Irvine- 27%= low reach
UC Davis- 30%= low reach
UC Santa Cruz-65%= match
UC Riverside- 92%= safety

I didn’t look at UCSB, but it is probably a low reach and UCSD is probably a mid-reach, with UCB and UCLA high reaches. UC Merced would be a safety.

If you want to run these schools go to “Custom Tables”, answer a few questions, click the box the says “admit rate”, and enter “ethnicity”, scroll down to “academics” and click the box that says “uw GPA” and “overall SAT score”:

I would say UChicago is a high reach and JHU is a mid-reach with your SAT I scores. Your SAT II scores are solid and so is your GPA. Did you ever take the ACT, you might have done better on it?

Really? I thought they were more essay driven than stats driven. Even if that were true, OP has a very low chance of getting in. On UChicago’s site, their SAT score ranges were 1100-1600 (M + CR). Even considering OP’s ethnicity, without a better hook it’s very unlikely he/she will get in with 1150.
