My Islamic religious beliefs prohibit me from working with interest, but I want to major in business or business econ…is it possible to major in one of these fields and NOT work with interest, so as not to violate my religious beliefs?
Perhaps working at a company like this, or the companies whose securities are invested in?

Do you mean, can you take accounting and not learn about how to calculate interest, or do you mean can you get a business degree and not work for a company in you have to charge people interest?
Simply learning how to calculate interest (or how interest works and is used in a business context) is not against either riba (either form), and I can’t that imagine an accounting course in a non-Islamic university would let you skip learning how it works.
Most companies have some sort of debt, and therefore are paying interest, but that doesn’t require you to work with it, and the vast majority of non-finance jobs in business don’t involve working with interest.
