Is this something I can include on a resume?

Studying Japanese outside of school?

Its not offered at our school, so I took a summer course in it. We don’t have a community college were I could continue it in a formal way, but I really like the language so I’ve kept working on it on my own. I got the next level of the textbook we used in class and have been working from there.

But I don’t have anything that can “confirm” my studying. I haven’t learned enough yet to take the SAT II (I’m a senior now).

Is it something I should include, if I don’t have anything to show for it?

Why not? I studied a language on my own and put it down, although I did have a high SAT II score and some other work that validated my fluency. I don’t think that’s necessary, though. If you did the work, why not take credit for it?
