I've Got To Know...What's On The Super Bowl Menu This Weekend?

We’re having a few couples over. Making a big pot of chili with the fixings, spinach jalapeno dip, crudite, guac and chips, oatmeal cookies and I’m not sure what else. A friend is bringing pulled pork and rolls and another an appetizer. May be inspired by something here to add to the menu :slight_smile:

@cellomom2, here’s the Jalapeno Popper Spread/Dip I have used:

2 8oz packages cream cheese softened (I often use the reduced fat one)
1 c mayonnaise
1/2 c. shredded monterey jack cheese
1 small can chopped green chilies
1/4 c. diced jalapeno peppers (I like to use fresh, seeded - but canned are fine)
1 c. shredded parmesan cheese
1/2 c. panko bread crumbs
Sweet pepper pieces and/or tortilla chips or crackers!

In a large bowl, beat the first five ingredients until blended, spread into an ungreased 9 inch pie plate. Sprinkle with parmesan cheese, top with panko. Bake at 400 degrees for 25-30 minutes or until lightl browned. Serve with peppers, chips, crackers

This is very similar - but has a stick of butter. I love butter, but I don’t miss it at all in the first recipe.

H, S and a friend are planning the menu. They are having tri tip, homemade chili and garlic bread. I think I’ll invite my D to go out and do something outside. Sunday is supposed to be a great weather day.
My S’s favorite team is the Denver Broncos so he is thrilled. My H has told me already that S is coming over to watch the game and I should not try to have conversation with S during the game.

Returned from the grocery store and the menu for tonight is set! The cashier at the grocery store said that chicken wings and tacos seem to the menu trend this year!! :slight_smile:

Our menu:
Chicken wings - choose your dipper (blue cheese, siracha bbq, ranch)
Reuben Bake
Velvetta/Chili dip (for husband - it’s one of the only dipper type foods he’ll eat!)
Jalapeno Popper Dip w/raw veggies for dippers
Brussel sprouts w/siracha aioli
Mixed berries (for something cool!)

Apple Pie and Vanilla Ice Cream

Crock pot meatballs with sticky rice.

Take-out Chinese.

We had chorizo meatballs with cilantro sauce, chips and guacamole, veggies with ranch dip and Texas sheet cake. Yum! Back to sensible eating tomorrow.

@SouthernHope - I tried the Pastrami with tater tots recipe. One of my sons loved them,DH liked it them and another said they were just ok. Which is pare for the course in my house. I’ll probably make them again sometime. .

Am bringing br chocolate chip cookie/brownie mix things hope they come out ok

We’re going to a party; hostess said she’s ordered the large sandwich tray from Costco. DH is making Sloppy Joe sliders; I’m bringing Caesar salad fixings. Other people will hopefully be bringing homemade treats. And, since I don’t like beer, I’m going to make Blue Hawaii’s for myself only they’ll be Orange Hawaii’s since I only have orange Curacao, not blue.

We stopped at Costco on the way home. There was a HUGE tasting of snack foods. We bought some frozen honey BBQ wings… We love birds, so go Falcons!

(Although Mr. says he will root for the commercials… or the Mariners. :wink: ).

Bagels and lox. We always attend a local synagogue blood drive on the morning of the super bowl and have great appetizing. Then, we go home and ignore the super bowl, although this year I will probably keep it on with sound off until half time so I can watch Lady Gaga and then I will change the channel.

Actually, though, H will probably make wings for the boys and their friends, who are having a “not watching the stupid sportsball game party.”

I’m working through the weekend. I’ll probably watch the commercials online, after someone starts a thread about them. Lol.

H is making duck chili, which he makes it once a year, because it’s a huge project (takes two days). He debones two ducks, uses the bones to make a stock and makes a rub for the meat, which sits overnight. Later he cooks beans (Rancho Gordo–the best) in the duck broth and then puts it all together adding jalepeno, red peppers, green peppers, and onions. It’s pretty amazing chili.
