key lime recipe needed

<p>If there is such a thing, I KNOW someone here will have it!!</p>

<p>I would like a recipe for mini key lime pies or tarts where you put a vanilla wafer at the bottom of a mini muffin paper holder (sort of like the crust) and then pour the rest of the key lime pie ingredient over that.</p>

<p>Anyone have this??</p>

<p>I don’t have the wafer thingy recipe. But the recipe I use for the key lime pie filling is super easy and really good. </p>

<p>4 egg yolks, beaten
2 (14 ounce) can sweetened condensed milk
1 cup key lime juice (or 1/2 regular lime/ 1/2 lemon)
1 (9 inch) prepared graham cracker crust</p>

<p>Preheat oven to 375 degrees F (190 degrees C).
Combine the egg yolks, sweetened condensed milk and lime juice. Mix well. Pour into unbaked graham cracker shell.
Bake in preheated oven for 15 minutes. Allow to cool. Top with whipped topping and garnish with lime slices if desired. </p>

<p>of course the times would have to change for small tarts.</p>

<p>Thanks I might actually go and find those keylime cooler cookies…I think someone said they sold those at Target.</p>

<p>The genuine Key Lime juice makes a huge difference to the taste. Just about any grocery should have it. I make mine now with a toasted coconut crust as my husband can’t have gluten.</p>

<p>It depends how lazy I am feeling and how bad the arthritis in my hands is feeling. It’s amazing how many of those tiny key limes you have to squeeze to get a cup of juice!</p>

<p>Squeeze? Why squeeze when you can buy this just about anywhere?</p>

<p>is it as good as fresh juice? I always find the other bottled lemon juices pretty nasty tasting compared to fresh squeezed juice, so assumed bottled key lime juice would be the same.</p>

<p>They have some yummy sounding recipes on their web site. The key lime cilantro marinade sounds really good.</p>

<p>It’s terrific. I bought some in Key West when I was there on my mother’s recommendation. Well worth ordering if you love key lime pie the way we do. Makes it so easy and zero hand pain (except to unscrew the top)! </p>

<p>Harris-Teeter has some key lime and white chocolate cookies that are quite delicious if anyone likes that sort of thing.</p>

<p>I use the Nellie & Joe’s - it is so easy I feel guilty when guests rave.
I make it up and then just pour it on the vanilla wafers set into the midget foil cupcake liners. set on a cookie sheet and bake for less than the pie time…</p>
