Does anyone know of colleges that promote a locally-sourced produce dining hall?
About a quarter of Cornell’s food purchases are locally sourced (and many of the surrounding restaurants use locally-sourced products as well – we’re really big on that in Ithaca)!

It’s worth pointing out that transportation costs are a tiny fraction of most foods’ greenhouse gas emissions. If a school commits to reducing food waste or encouraging students to skip the beef, that is far more beneficial to the environment than whether the food came from 1500 miles away or 5.
