Looking for a Duck in Metro New York City

<p>I recently viewed an Alton Brown DVD wherein he cooked a great-looking duck recipe. Post haste, off to a couple of meat markets I went to search for the lucious waterfowl. Well, imagine my surprise to find that at the shops where I actually found fresh duck, the breasts were as flat as board. They were nothing like the plump-breasted birds Alton observed at his visit to a duck breeder on Long Island. What gives?</p>

<p>I finally purchased a fresh duck at an Asian market, but again the breast is not very meaty. Hey, you NYC and NJ duck lovers (no foie gras, please)!!! Where’s a decent purveyor of this lucious fowl? Am I going to be forced to pay $5 a pound at Whole Foods Market?</p>

Hate to stereotype, but you shouldn’t be surprised. Asian ducks are not known for their “meaty breasts”, but have many other savory qualities.</p>

More likely to be “plump-breasted” on Long Island, but also very possible they were artificially enhanced in some way. It all comes down to personal preference. ;)</p>

<p>I think you should find the LI breeder. I’m sure the ducks can be shipped to you. Or you can take a weekend jaunt out to the Island to pick up your naturally big-breasted bird.</p>

<p>If you ever want a duck, come by our practice pool. They are waiting for us every morning at 5 am when we come to practice. Male and female mallard pair.</p>

<p>Try a kosher market or the kosher section of your local market. Empire has frozen ducks that are (or at least were in the past) quite meaty.</p>

<p>It was Doug Corwin’s farm that Alton Brown visited. Boy, was that duck in Corwin’s arms a bruiser! Really large.</p>

<p>By the way, do wholesalers really import whole fresh ducks from China? That’s not a comforting thought, given the tainted [imported-from-China] food scandals of recent months.</p>
