Another idea - Black Bean, Corn & Tomato salad - Can of rinsed black beans, thawed frozen corn, cilantro, grape tomatoes cut in half. Salt & pepper. Red wine vinegar and a little oil as a dressing. Good at room temperature and safe if it isn’t refrigerated. Its very forgiving, can be made the night before and if you want to be fancy you can slice an avocado on top when you serve it.
Please put some onions, garlic and chilies in that salad! And some cilantro on the side!
Scallions are my choice for the Black Bean & Corn Salad. They’re not as strong as onions, and they’re also beautifullly green for even more color.

This is a good quinoa salad. I substitute cumin for the curry and serve it over a bed of spinach or baby lettuce…

I mix up the fruit I bring.
I might cut up pineapple one time, mix various berries the next time, and take watermelon another time.

Black bean salad must have lime juice please instead of vinegar for the acid component and yes to the cilantro.
