How much do correlations between ECs and intended major operate in the college admission process?

A little. Colleges want to see leadership positions.

I would say that if there is any correlation that is apparent between EC’s and intended major, it’s a PLUS, but it’s not something that the adcom will seek out. If there is NO correlation, it won’t hurt you because adcoms realize that many students will switch their majors. If, for instance, you’ve declared as an Immunology major, and you’ve been working with the Bill and Melinda Gates Foundation as a volunteer on a global project to eradicate pandemic diseases, then they will certainly take note. On the other hand, an EC that demonstrates a passion for your values might just stand out anyway, regardless of whether it related to your chosen major. I wouldn’t be too concerned one way or other about creating that kind of consistency.
