I always keep breaded chicken in my freezer for chicken parm, but also for Chinese chicken salad (a favorite around here), and chicken strips for kids.
I made an easy ground chicken lettuce wrap recipe just yesterday. The filling would be easy to freeze. I make bowls with it - bibb lettuce as the base topped with some rice (I use the Trader Joe’s frozen bags that heat in the microwave in 3 minutes) and then top with the chicken mixture. Yummy!
My favorite casserole of all time is this one from Six Sisters Stuff. I’ve made it dozens of times. I’m sure it would freeze as well.

I made this tonight, and it was delicious! Thanks so much for sharing the recipe.
I cooked it on low for seven hours. The recipe calls for five, boneless, skinless chicken thighs, but I used six. Next time, I think I will use eight. The recipe calls for 1 - 3 tsp of cayenne pepper. I used one, and it was just right for me. Dh probably would have liked a bit more heat, but he lapped it up anyway.

You could make this a day or two ahead and finish it off in the oven. I made it twice and both times it was great. Has all the food groups.
Gnocchi with Chicken, red pesto, spinach, fresh basil, mozzarella.
