I am applying as an Economics major but as an international applicant, most of the knowledge needed for the Math II SAT subject test is not covered by my math class in my country. Yet I noticed that virtually all of accepted applicants scored 700+ on Math II.

Should I go ahead and try to score 750+ on Math I? Or should I take Math II anyways and score something along the lines of 550-ish?

I would go ahead and take Math I. Your transcript will make evident your lack of preparation for the Math II test. The curve for Math I is supposedly far less generous than it is for Math II, so I would make sure you really know your stuff so you can demonstrate a strong understanding of the math you do know.
