On website of MIT is written that they “do not have preference which level math you take”. It crossed my mind If choice of math’s level is treated as a sign of our enthusiasm for them. It means that if we chose mathematics on level 1 it is sign that we want to go easy or we aren’t really interested, but if we chose level 2, it means that we want to be admitted and it increases our chances?

You answered your question in the first line. MIT doesn’t have a preference between the two, so just take the one you think you’ll do better on.
