Meal Train ideas

I could do a Shepard’s Pie but I don’t want a family of two to be overwhelmed with casseroles. What do you think of minestrone with a loaf of fresh bread and a side salad. My go to soup in autumn is corn chowder but that seems too heavy between other casseroles. I also make butternut squash soup but is that a universally liked soup?

I love Shepard’s Pie and butternut squash soup (which I make with curry), I begat one super picky eater so I don’t count on anything being universally liked.

I think your idea of soup, salad, bread is 100% great. It can be used for lunch or dinner, can be heavier or lighter, leftover bread can be used for sandwiches or toast . Refreshing after ALL those casseroles!

Personally I’m not a minestrone fan…but love other soups!

I like the soup, etc. idea also, but lots of people don’t like minestrone (including me).

Great idea. Casseroles get old really quick, not to mention they are usually high calorie, high carb meals. I don’t think butternut squash soup will go over as well as minestrone or corn chowder, although I like all soups. The only ones I would stay away from right now are chicken or turkey noodle/rice… chances are more than one person on the train will use their leftovers to make a dish or soup. A nice autumn-based salad with cranberries and nuts would be a fantastic side to go with what looks like delicious bread !

Meal Train is an organized meal giving plan for a friend or family member. You can see what dates are open and what others plan to give. The recipient can also list dietary preferences or allergies.

We did a Meal Train a few years ago. We made poached salmon with dill and sour cream sauce, Greek salad and bought vanilla ice cream. There were a couple of gluten sensitivities in the recipient family so we skipped bread.

As for the OP, I personally LOVE butternut squash soup and often buy it from a local store because I just don’t have time or interest in cooking it myself. I don’t like chowders or minestrone, so I guess I am the outlier.

When I did Meal Train, the family’s preferences, allergies and dislikes were very clearly indicated so we didn’t have to guess.

Loaded baked potato soup. It’s filling and my mom always made potato soup for me when I was sick. :slight_smile:
