I am currently going to highschool in NJ a rising senior.
My GPA is unweighted around 3.1 and weighted around 3.2 (very low) ;(
My sat is 1590 but I am planning to take one in October shooting for an 1800
Suppose I get an 1800 on my SAT and I’m also taking 2 AP classes and the rest are honors senior year
What are the chances for me getting into the engineering programs for these colleges
Colleges : NJIT, Rutgers NB, Purdue University, UCSC, UM-Amherst, and UIUC

All of those schools, except NJIT, are out of reach due to your GPA, even if you bring your SAT up.

What if OP brings it to a 3.8 and a SAT of 1800.
Purdue would then be a match.

I agree with the above post. 
I am taking AP Econ, AP Physics 2, Honors Calc, Honors English, and Anatomy and Physiology.
If I were to recieve all A’s on all of these classes what would it bring my GPA to?
Also, if i am applying to some colleges regular decision, what parts of my senior grade would actually matter? 1st quarter? 1st semester?
If you cannot recalculate your GPA given those A’s you have another problem.
Also, OP, know how your school assigns and weights GPAs. I know some schools only assign half a point to honors (or none at all) and may give extra points to A+. My school assigns one extra point to all honors and APs, and any letter grade, regardless of sign (+,-, regular) gets assigned like this: A=4, B=3, C=2, etc.
And yes. It might be a problem if you can’t even recalculate your GPA with assumed and current grades. It is mathematically impossible to bring a 3.1 to a 3.8 in one semester given a basic high school schedule. It took me two semesters, with 2Bs and 10 As, to bring my 3.714 up to a 3.75. You do the math.
To answer your original question: take all of these colleges off your list. UCs don’t take senior grades into consideration, unless you are chosen for augmented review. Everything that you have listed puts these colleges out of your reach.
Most schools only look at unweighted GPAs anyway.
So you’re saying NJIT is even a reach for me?
