Apparently it is - National Nacho Day.
Gotta say, I’m a nachos fan. From the gloppy cheese sauce at a sporting event to deluxe homemade nachos piled high - a real delicious treat!
For “just cheese” nachos, Doritos need to be the base. Pile on some cheese and hot banana peppers and it’s golden.
For loaded nachos:
Tortilla chips
Refried beans
A couple of grinder turns of garlic
Sliced fresh jalapenos
Meat for me is optional (ground beef or shredded chicken sometimes)
Shredded co-jack blend
Crumbled queso fresco
Sriracha
Shredded lettuce or cilantro
Peach mango salsa
Dollop of sour cream
I didn’t say it was healthy, just that it was a delicious occasional treat!
I should say that the gloppy cheese has no place in my refrig unless it’s a quality queso but if I’m at a ball game or some place and gloppy cheese is put in front of me, I will consume some.
Tostitos (because they’re bigger than Doritos) with sharp cheddar and shredded chicken or turkey. Nice and simple. Sometimes I’ll add a side of refried beans to dip - I don’t like them directly on the nachos because I think they make them mushy.
There is some type of queso that I’ve had at a couple of Mexican restaurants that I’d love to try to replicate - all I know is that it’s white and very good.
I like the gloppy cheese sauce with soft pretzels more than nachos.
@LeastComplicated I have a recipe that replicates the white Mexican queso at restaurants. It’s a fan favorite here and makes a lot. Let me know if you would like me to share it with you
1 1/4 lb white American cheese (I get it at the deli counter, cut in thick slices)
1 small can chopped green chiles
7-8 jarred sliced jalapeños
1/8 cup jarred jalapeño juice
2/3 cup of milk
1/2 cup of water
Pinch of cumin
Tear up cheese into small chunks and place in large bowl. Blend the jalapeños and green chiles to almost a purer. Add to cheese. Add jalapeño juice, milk, water and cumin. Microwave on high 4-5 minutes at a time, stirring in between until all cheese is melted. It will appear watery at first. Serve WITH YOUR FAVORITE CHIPS directly out of microwave or transfer to a crockpot to take to a party.
