well, I am an international transfer student and I have just received a "full ride " from amherst, but…
I don’t know what to do since I have also been accepted to a new, ambitious german university (founded in 1998). I want to get in a very good science grad school, to stay in a laboratory at least half of my life (dexter is one of my idols :P) and I am not sure about the academics level of amherst, especially of the strength of the chemistry/physics/math dept.
please do comment.

I don’t know specifically about Amherst’s science depts, but it is a very highly regarded LAC and if you do well there, you will definitely get in to a top grad school in your field. An American graduate degree will still do more for you worldwide than a German one will. And perfecting your English wil probably do more for you professionally than perfecting your German. Your life will also be more comfortable and hassle free at a private institution like Amherst-- a German university is likely to leave you more to your own devices.
