New Year's Eve Easy Appetizer?

These are great! Not too late because bowl games will be going on for a while and I love to do appetizers for those.

I had to bring a dairy-free appetizer to a party, and found this:

[Roasted Red Pepper and Walnut Spread Recipe at Epicurious.com](http://www.epicurious.com/recipes/food/views/Roasted-Red-Pepper-and-Walnut-Spread-354472)

Very easy, healthful, and delicious. I’ve made it several times and it is always gobbled up quickly.

Brie With Brown Sugar, Macademia Nuts and Coconut

Remove the rind from a few wedges of good brie (plain dental floss works well). Press cheese into a round dish. Top with a crumble of brown sugar, softened butter, flaked coconut and chopped nuts (barely enough butter to make it crumbly). Melt topping in oven broiler on low for as brief as possible (you don’t want to turn the brie into a soup).

You can skip the macademia and coconut and use pecans instead.

Serve with buttery, flaky crackers.

Really easy 2-ingredient recipe–my go-to when I can’t think of anything else or don’t have time: 8 oz of smoked trout (you can buy it at most gourmet food shops and even large grocery stores that have a gourmet food section). The store where I buy it, it’s in the same area as smoked salmon. Break up trout into sections and mix with 1 large (8 oz) package of Philadelphia Cream Cheese. Serve with crackers. I’ve served this 3 times since Christmas and it was gone almost immediately.
