- Assimilation Vs. Traditionalization? The author is discussing a person who is using a traditional method to adapt a foreign food to his own liking. Assimilation is joining/blending into another culture. Traditionalization is making something traditional. Clearly, the the person described is making a foreign food with a “familiar complex of flavors” - a sure indication that the subject is using traditionalization.<br>

traditionalization implies that the method of creating foreign dishes with familiar flavors has become “traditional”, or part of their lifestyle.
assimilation indicates a blending of cultures - in the same way people’s cultures are mixed with both their roots and their new homeland, people mix foreign foods with flavors that they are familiar with.</p>
<p>now I cannot remember what the question was asking, but here is the quote," By preparing a novel (new) kind of food using familiar complex of flavors-by cooking it with traditional spices- the new is rendered familiar." SO, it appears that they are assimilating…</p>

that line was after the description of the parades in the past.
my answer was “it brought it back to the present” because it was talking about parades to the past and then shifts to the present.</p>
