If a student is not expected to take every AP class offered, as most schools claim, what percentage of those classes will reflect a student’s ability to succeed in a challenging curriculum?

That depends on the student, and on what the student is doing outside of class.

Does anyone think it can be reduced to a rough percentage, say you’d better take 50% (or some other #)of the APs offered to be considered competitive?

When you say ‘offered,’ do you mean in your school, or in general?

If your school offers 2 APs, by all means, take them. If your school offers 20 APs, I’d say as long as you take 5-7 of them, you’re fine. However, it really depends on your personal ability. You don’t want to spread yourself too thin.
