On getting a research-type of activity, try direct contact (email), and if there are speakers invited to her school to talk about their careers, she might want to demonstrate (great) interest and ask (in-person) if she could volunteer at their labs.
If she manages to get a coaching type job, see if there are additional certifications sanctioned by, say, the regional volleyball organization, that she could complete, and therefore, have that as a documented activity.
The pay-to-research/learn activity might be useful indirectly. My son was shocked into action after he learned from his fellow science campers (Hopkinsā CTY) that they had already taken standardized tests while he had not given them much thoughts. Most of the time, parentsā words tend to go through the kidsā head, unregistered, of course.
