Here are my top choices:
Princeton (ED)
Penn(EA)
Harvard(EA)
Emory(EA)
Vanderbilt(EA)
Brown
Michigan
Syracuse

How prestigous if your school? It’s not common that the school only has one AP, but the rest of your resume looks nice. Your community service is fabulous, and your ECs are pretty great too.
I wish I could tell you that Harvard, Princeton, Penn, and Vanderbilt are reach/match/in/etc, but they are pretty unpredictable. Your SAT score looks great, so I think Emory, Michigan, and Syracuse are at least matches.
Harvard, Princeton, Penn, Vanderbilt-low/mid reach
Brown–low reach/match
Syracuse, Michigan–match, if not in.
