We have under-counter open shelving so not as open to air as above-counter open shelving, but the dishes we keep on the open shelves are the ones we use the most, so they are not sitting long enough to accumulate dust, and we get plenty of dust In the desert.
I also prefer drawers to cabinets and would have more of them if I could. None of our cabinets/drawers anywhere in the house have knobs/pulls/handles. They are very ergonomic and easy to open by ample but concealed fingertip recesses at the bottom of the upper cabinets and at the top of the lower cabinets.
For utensils, I got a very, very large (would hold a garden hose) round garden pot from Home Depot and spray-painted it with hammered copper paint to match our kitchen accents. It holds everything beautifully, but I did buy a smaller version of the same pot to hold my baking utensils because my baking corner is not near the stove where the big pot is.
