Potluck dessert that can sit out that’s not boring

Church potluck coming up. Assignments are made alphabetically, and my last name was assigned desserts. It’ll have to sit out for an hour and a half before the potluck even starts as I have handbells rehearsal. So nothing hot or that requires refrigeration.

I really don’t want to do cookies or brownies, though they seem best. I prefer the ability to have servings cut or portioned out ahead of time. I find people reluctant to cut into a whole cake or pie.

Is it silly that I want something visually appealing and unique that’s easy to pick up/serve? Are there, “cute,” cookies or brownies?

I could do fudge or pecan tassies, but those seems Christmas-y/fallish.

Desserts are my least favorite category to be assigned anyway. Inspire me, please!

Biscotti. The longer they sit the better they taste. I make a combo platter for my go to… chocolate with a mocha glaze, lemon with vanilla glaze, traditional mandel bread with raisins or craisins…very easy and they look great on a platter!

I like to bring bars/cookies to these type of events. These are always a crowd pleaser.

Oh, those look wonderful! And remind me of my old favorite, Seven Layer Bars.

My go-to dessert that everyone loves and is easy and gets better after a day or two is a cake but is in a 10x15 pan, not a regular layer cake, so easy to cut and serve. Would you consider that? Want the recipe?

I think bars are a good compromise of cookies or brownies.

These are delicious and remind my family of the taste of an apricot KIND bar.

I’ll add in that a good lemon bar - I like the Pioneer Women recipe - is pretty and very color appropriate for this time of year!!!

My friend makes these and they are usually a hit. A better way to serve pie to a crowd. You can pre slice it. Berry Slab Pie - Wood & Spoon

I was going to suggest 7 layer bars! I make them with gluten free graham crumbs.

If there are already quite a few peope bringing desserts, these are a welcome option. you can also buy mini store bought cupcakes and stick a skewer into each cupcake. Rainbow fruit skewers recipe | Good Food

FYI, the recipe doesn’t say what size pan to use. I imagine most use a 9x13, but I like using a larger pan so that it goes further.

I’m asked for it so often that I know right where it is. And I said 10x15, but looks like my odd-sized glass pan is 10x13.5.

Blueberry Buckle Coffee Cake

4 cups flour
1/2 cup shortening
1 1/2 cups sugar
1 1/2 cups milk
5 tsp baking powder
2 eggs
1 1/2 tsp salt
4 cups fresh blueberries

Topping:
2 cups sugar
2/3 cup flour
1 tsp cinnamon (I use a bit more)
1/2 cup margarine

Blend first 7 ingredients. Beat vigorously 1/2 minute. Carefully stir in blueberries. Spread 1/2 of batter into greased pan. Mix topping ingredients and sprinkle 1/2 topping over batter. Add remaining batter, then sprinkle rest of topping on top. Bake at 350 45-50 minutes.

The recipe didn’t tell me what pan to use. I use a 10X13.5. A weird size, I know. A 9x13 would work, too.

I love a blueberry buckle. I know I’d be reaching for a piece. Brownies are easy and always a hit. If there will be children mini cupcakes with a bit of frosting and some sort of gummy candy on top. I went to one potluck and someone had brought fruit they had dehydrated which was nice for a change.

Have you heard of s’mores crack?
This may not be my exact recipe - I can take a pick and post it if you’re interested when I get home. It’s VERY sweet.

If the potluck is outside, I’d stay away from chocolate. If by ‘sit out’ you mean inside a church hall, then I guess it is okay.

Either way I’d vote for lemon bars, because I love lemon bars. Or fruit and cheese, as I love fruit and cheese and agree there are almost always too much ‘cakey’ desserts.

Or those little pastry shells with something in them like a fruit pie filling or, again, cheese with fig or cranberry. I took them as an appetizer but could be a dessert.
