We would have called the Hand Pies ‘tarts’ (my grandmother gave us the cut off edges of her pie crusts to make tarts) and I’d definitely use Pillsbury roll out dough to make them. Too much work to make pie crust from scratch!
@1214mom I’ve had Matzo crack which is very similar. It doesn’t have the marshmallows, but it is irrestible too. And even easier! (I’ve never had it fancied up with nuts or sea salt as most of the online recipes call for.) Matzo Crack Recipe
My husband always makes baklava. It’s pretty easy as long as you don’t mind buttering a million layers of filo dough! He usually uses pecans because they taste even better than the walnuts his mother used (Yugoslavian recipe) or the pistachios that are most common in the Middle East. This weekend’s version had hazelnuts and pistachios, a handful of pecans and about half walnuts because that was what was in the freezer.
Yep, if you are trying to make something really gluten free you have to check that everything has the GF label. Most oatmeal isn’t gluten free either. And make sure your cutting boards aren’t contaminated either.

Another idea. A cookie cake but bake it in a sheet pan (rectangle) instead of a circular pan. You can frost it (either frost the entire thing or do a “dollop” through a cake decorator tip on each piece) and cut it before hand.
Or same idea but do a sugar cookie and frost with cream cheese frosting and do it fruit pizza style.
I second the baklava idea – it’s actually incredibly easy and most people are impressed.
I bought a large sheet pan just so I could make Texas sheet cake. I also make a cream puff dessert in that pan so I guess it’s been an ok investment
I love Texas Chocolate Sheet Cake and is one of my go-tos but only indoors. The heat kind of melts it, although I’d still eat it gooey!
No substitute for genuine baklava but I have made this “easier” recipe a couple of times at the holidays and it is quite good and surprisingly texture wise similar to the OG!
As is most baklava, it’s def sweet so small pieces are a good idea.
I’m glad I read this thread, since my D always seems to need something for a bake sale at school, and there are a lot of great ideas for bake sale items in this thread
I mentioned hawaiian butter mochi to my D and we’re both excited to try making it for the next bake sale! We’ve had mochi muffins before (baked by another mom) that were amazing and probably a similar recipe.
I have made baklava before, and it can be a bit messy for a bake sale because of the shards of paperthin dough and easily scattered bits of nuts and it also gets sticky from the honey. Probably good for a potluck though!
One more idea then I’ll stop…
If you have a mini muffin pan, these are easy and always a hit at potlucks.
