i have fairly okay grades (i top in computers always)
my ECs are : piano, guitar till trinity grade 6 exam and solo as well as choir singing
community service at an orphanage( teaching, cleaning, cooking …etc ) since 9th grade
i began my own organization also to educate children from the slums

Your community service seems really good, youll probably get into most of them.
UC’s are very GPA focused. Without a UC GPA and test scores, it is impossible to predict. According to the common data set for the UC’s, they consider UC GPA/test scores/HS course rigor and essays the most important. EC’s are important but if you do not have the grades and test scores, community service hours and EC’s will not overcome the academics.

I’m a student from India and we don’t have GPA. We have percentage which can’t really be converted to GPA as the marking systems are different. My SAT score was 1310 (600 in English and 710 in Mathematics)
So what kind of grading system do you have and how do you compare to your fellow students? CBSE marks? Any SAT subject tests?
With your SAT scores, UCI possibly a Match. UCD/UCSB maybe a High Match. UCSD a Low Reach and UCB/UCLA a Reach. I think UCI would be the only accept just based on what you have posted.
