I am currently working on my statement of purpose for EE PhD programs. I am an engineering physics major and have some really good research experience in fields that are very different from what I want to pursue in graduate school. How should I best present this? Should I qualify my interest and emphasize on the research skills gained or present the work in its entirety?

Research experience as an undergraduate does not need to be in the same area as you are planning to study for a Ph.D. It is the experience itself which is valuable. Present it in a way that shows what you learned about DOING research, not about what research you did. That being said, you need to be articulate about describing your research projects so don’t minimize the content. i presume that your LOR writers include your resarch mentors and they will definitely write about your projects and performance too.
