For the ~150 word (250 word limit) summer experience question, should I elaborate on one major activity that is an important part of my application, or about one activity that isn’t reflected elsewhere but is interesting, or should I instead list all/many of the things I did?

I think the first or second, not the third.

Agree with @sherpa don’t do #3, I’d write about the activity that is most “you”, likely #1. If #2 was your passion or important it would have been mentioned before…
