Question about non-transferable units

Hi, I am a cc student looking to transfer to UCLA for mechanical engineering. I heard UC’s only look at transferable course. I got a C in sociology 101 and history of the united states 1. For this major, it’s all math and physics. However, assist.org says this

Applicants are not required to complete the HSSEAS General Education
Requirements in order to be admitted, although it is beneficial for students to
complete 1 course from each of the following areas: arts, humanities, social
sciences, and life sciences.

Here is my question. If it says I need one unit of social science, but I already took sociology 101 and got a C. Can I take different sociology class and have THAT count to my grade? In other words, for non-major recommended classes can you pick and choose which one they look at as your UC transferable grades?
