M stands for Molecular.

Math I covers Algebra I, Geometry, and Algebra II
this test has a very harsh curve (-1 will be a 790/780)

Math II includes Math I topics, Pre-Calculus and Trigonometry.
this test on the other hand has a lenient curve (-6 would still be a 800)

I don’t think it matters. Most colleges want you to take tests that deal with your intended area of interest. The only time that an 800 won’t help you when when you take a Subject test of your own language. IE a Chinese taking SAT II Chinese. It it presumed that one would score an 800 on their mother tongue
