Is there like a cutoff similar to the SAT for subject tests? For example: Is there a certain score I need to get on a subject test to demonstrate my academic capability in that subject?

Agreed. 700+ is considered generally good but all subject tests are curved differently.
What about for more selective institutions? Places like HYPSM I know 2250 and 2400 makes no real difference. Is that the same for subject tests?
It depends on the school. Most schools do not publish the SAT2 score in their admission stat. MIT does though. For top schools, try to get 750+. SAT 2250 is sufficient for the most competitive schools, however, the admission rate still increase slightly with higher scores. It is just not worth the effort after you have achieved 2250 in SAT.
