Although many domestic rabbits (become) alarmed when they are (lifted) off the ground and therefore do not (enjoy to be) held, some tolerate such handling quite well

isn’t lifted supposed to be (being lifted)?
is it possible to change both (lifted) and (enjoy to be ) to (being)? is it correct grammatically?

Being lifted is wordy, so I wouldn’t use it. It’s correct, but wordy/awkward. Generally, the word
“being” signals a wrong answer.

enjoy being is idiomatically correct. You could not say enjoy to be lifted, but you could say enjoy being lifted.
