Currently an intended business major/intended major or minor in cs

Spring 11:
Math 53/55
Econ 100b
CS61c (skipping 61b because of Hilfinger)
-relaxing breadth-

What should I take for math? Just shoot for 55? How’s 55 like?
I want to do 53 in case I want to do math based finance / econometrics… and not to mention the professor is supposedly amazing.

Overall, how does the work load look like?

If you want to do math based finance / econometrics, you may want to take Economics 101 instead of 100 (and 141 instead of 140 if you take an econometrics course).

Workload wise, the Math and Economics courses should not be that much work. Computer Science courses with programming can be more work. So can courses with labs, but it does not look like you are considering those.

If you like math and are good at it, you can probably construct a four year program of study including Math, Economics, Statistics, and Computer Science which prepares you for job and career possibilities in mathematical finance, actuarial science, and computer software development.
