So in my high school they are limiting the amount of AP’s/ AICE classes that upcoming seniors can take. They are limiting to 4 AP’s max and you can’t take two of the same subjects. Personally, I don’t like this as I would like a challenging schedule but the only way to take more then 4 is through special approval.
If I don’t get said approval can I override the school’s decision?

This will not hurt your chances at UF (or other selective schools), you’ll still be taking the most rigorous course load available at your school. 4 AP/AICE classes will be ok.
The school likely put this rule in place, due to a lack of funding (they can’t pay for the additional classes), lack of teachers qualified to teach the classes, or because they have issues with the number of folks passing the test (low pass rates).
The reasons above are why you likely can’t get the school’s decision overridden. However, you can try to get special approval.
You may also want to look into taking some duel enrollment classes. If you’re in the AICE program, you do want to earn your AICE diploma, but you ;may be able to work one or two DE classes into your schedule.

As @Gator88NE said, limitations placed on you by your school will not hurt your chances at UF. But make sure your choice of APs create course rigor. Not all APs demonstrate course rigor equally, i.e AP Calc > AP Stats. You GC should be able to help you make the best selection of APs to demonstrate course rigor based courses you have already taken and offering at your school.
Ask if supplementing with FLVS could be an option also.
Have you taken others?
You can always supplement the 4 AP’s with one or two dual enrollment classes, but 4 AP classes is plenty for senior year (remember you’ll have the hidden extra class called “college applications”.)
