I have applied to Princeton in the SCEA deadline. But since applying, I have done some online courses - should I send the certificates in?
If so, how? should I email them?

No - they don’t need any more paper. Additionally, if they weren’t part of the original application, it’s not even worth sending them an update to tell them you completed. It’s a given that most applicants will complete some activities and start new ones after an application has been submitted.
One can send an email to the admissions office with an update. I would say though that I would only do it if it is a meaningful award. As in mentioned in a paper outside of the local weekly freebie.
