I’m applying for something and sending it directly to the manager through email. I told my mom about it, and she said that I should have faxed or hand it in person.

Can email really be intercepted? The manager did reply from his Iphone. Now, I am more worried. What if his I-phone is hacked? they will get all my information which includes ssn?

They can, but the odds that someone is going to find you important enough to take the time to hack your email or phreak your phone is astronomical. I think you’ll be fine.
BTW, faxes can be hacked too.

Sensitive data CAN be stolen if your manager a really powerful viruse/spyware/malware/anything bad on his computer. But usually people are smart enough to fix their comps.

The data can’t just be snatched out of the air. No one is going to specifically hack his phone. And iPhones are very secure. It is NOT hacked. I would bet my future child on it. They always have updates since they’re always connected to the internet.
