<p>Not sure if this works for them or not but I have a recipe for Red beans and rice that serves like 10.</p>
<p>1 cup rice
2 medium onions
1 red bell pepper
2 cloves garlic
2 tbsp oil
1 tsp cumin
1 tsp oregano
1/2 tsp chili powder
2 cans small red beans
1 can diced tomatoes undrained</p>
<p>Mom60 - that comes close to what I serve when people are coming over in the evening.
I make an a eggplant curry dish that is similar to baba ganosh that is always a big hit. </p>
<p>I think if these are younger people, the lasagna would be a great idea or my lentil stew or the make your own hoagie thing with hummus, etc. </p>
