Our local supermarket has riced cauliflower in with the regular fresh vegetables. But really if you have a food processor it’s super easy to rice it and cheaper. I used the large grater instead of the blade as suggested.

I discovered yesterday that both Bird’s Eye and Green Giant have fresh frozen riced cauliflower, and GG also has mashed cauliflower. I consider this a huge find, since I miss rice and potatoes when I make dishes that typically include one or the other. I’ve also seen cauliflower “crumbles” in our Safeway in the fresh veggie section. H wont eat it, but I will, and that will make it easier on me to meal plan. H can have his potatoes and rice, I’ll have faux copies of both.

Cauliflower florets or steaks roasted in some olive oil, a little salt and pepper then tossed with some toasted pine nuts, golden raisins, lemon zest - really good!

Yes, I found these in the fresh veggies sections, and TJ also had frozen riced cauliflower and broccoli.

I suspect that part of the reason when I made the recipe it was so good, was that I didn’t use frozen anything - but obviously it’s easier if you use the frozen oriental vegetables which will come already sauced.

I was on Atkins awhile back and I always enjoyed these.

@doschicos Go easy on those raisins. More carbs than you realize.

I need to check out the rices cauliflower…I have roasted it and also made mock mashed

@Chardo Raisins are a garnish. Maybe a tablespoon or so per serving, not handfuls. One can leave them out if they prefer. No worries! :slight_smile:

Who knew there were so many ways to use cauliflower ? Here is a recipe I made twice this week

I made a cauliflower crust pizza tonight. I baked the crust first on my pizza stone.Then put it back in the oven after putting the toppings on. DH went nuts over it.

The cauliflower crust pizza does have a lot of cheese in it. For less dairy, you have alternatives.
I also made a pizza using a low carb crust I bought from Cynthia Ann’s bakery. It’s made with almond flour and has very few net carbs, feels more like a flour crust. You can put them in the freezer and pull out when desired. It’s a lot less work than making the cauliflower crust. I ordered the package of 5 large and a package of the minis.

@Nrdsb4 , thanks for that cauliflower pizza crust. Dh is diabetic, keeps it under control with a very low carb diet and loves cauliflower. This will be a hit.
