Gardens everywhere are starting to produce amazing bounty! Whether you picked from your garden, the farmer’s market, the co-op box or the big box store, share your most recent garden “hit” or “miss” recipe. Sometimes it’s fun to hear about the misses as well as the successes!
My weekend “hit”.
Beet Greens With Bacon, Jalapeno and Sweet Corn
(this was a one person serving - ME!)
Sizzle one piece of bacon in fry pan and chop. Add one beet either previously roasted or just chopped thinly for pan, 1/2 ear of corn uncooked, a little jalapeno. Add good handful of beet greens. Once wilted, add a dash of balsamic vinegar and a sprinkle (light!) of brown sugar.
DELICIOUS!!! Also grilled nectarine halves on the grill and sprinkled with chopped almonds and honey. YUM.
