Should I aim for UC's? Or others?

Hi I am a rising junior but I hope to get some early advice on where I should aim for. It is a little early to say my test scores as of now but I wanted an opinion on overall schedule and EC.

Freshman: (Pretty easy course load as there wasn’t much to take this year)
Honors Bio
Honors English
Spanish 2
Geometry
Health

Took Algebra 2 at a local community college

Sophomore:
AP Bio
AP World History
Honors Chem
Honors English
Spanish 3
Honors Pre Calc w/ Trig

Currently taking Statistics at a local community college and an online cinema class

Junior:
AP Calc BC
AP US
AP English 11
AP Chem
AP Physics C Mech
(possibly another class if I do not feel overwhelmed by class schedule but I have a feeling I might overloaded…)

Going to apply to some summer college programs for a multivariable calc class over the summer

Senior:
AP English 12
AP Physics C E/M
AP Econ/Gov
AP Psych

I am planning to take college courses during the year such as higher level math or more abstract subjects

AP Scores:
5 on AP World
4 on AP Bio

GPA: was about 4.7 W and 3.8 UW since I had a B Freshman year and Sophomore year

Standardized Testing:
I took SAT II for Math 2 and Bio but I received rather poor scores so I’ll retake next year.
I am planning to take the SAT I in October and I am confident I score above 2000s if I stick well enough to my current study program.

EC’s:
Volunteered occasionally at a local thrift shop
Currently in the middle of terms of a hospital volunteer/internship
Will be volunteering at local schools to help tutor
Treasurer/Secretary of a couple clubs
(This is probably my worst section yet and I hope to improve with a possible project, entering competitions, or getting more involved with the community)

I feel that my schedule and academic portion of my application is decent for most colleges but I lack greatly in EC’s and would appreciate some advice here. Thanks!

Your GPA looks competitive so far, but unless you post your test scores, no one can gauge your chances at any of the UC’s. Your HS rigor looks very good, you have some leadership positions which is a plus, so work on getting some competitive test scores and writing some outstanding essays.
