Should I change Majors?

I’m currently a sophomore engineering student and I’m in a predicament. I’m attending a respectable regional state university and I applied as a transfer student to the flagship state university and was rejected (different story). Now I have a few options.
Finish my engineering degree from an average engineering school on a five year plan (start August 2013 end August 2048) taking a few electives here and there to fill up the extra few courses.
Finish my engineering degree from an average engineering school on a five year plan and double major in econ.

OR

I change my major to mathematics and physics, and graduate in 4 years (Start August 2013 end April 2017) then get a masters degree in engineering (Civil or Industrial, maybe Operations Research) from a school with more prestige? The way I see it this option seems to make the most sense because with only a year possibly a year and a half more schooling I could have 2 degrees and one from a respectable university in the time it would take me to get an “average” undergraduate engineering degree

If your college is respectable and ABET accredited, I don’t see the point of extending your education to get a more prestigious name on your piece of paper.

Nobody really cares where you graduated from after your first job.

Why would it take five years to complete your bachelor’s degree in whatever engineering major you are in?
