Simple supper for 8 ideas needed

<p>What a great make ahead menu! I’m going to make a note of it and use it myself one day.
Did you serve the chicken as sandwiches of just on its own? I particularly like the simplicity!</p>

<p>Hey…it takes a village…and if we can navigate the college admissions process then we need new challenges to keep our brains sharp.</p>

<p>and to Beil1958 Yes, I had 2 kinds of sandwich rolls: big Kaiser rolls and then smaller whole wheat ones so people had some options for portion control. I did the potato salad and BBQ sauce the night before, put the chicken in the crockpot in the am, and did the green salad just before serving. Did carrots and hummus and crackers with cream cheese/pepper jelly spread with drinks beforehand. It all was pretty simple and meant I could mostly enjoy the guests!</p>

<p>Sounds a bit weird to me. Surely potato + spinach, then strawberry + brownies would be moe normal?</p>

<p>Actually I did serve the strawberries that weren’t in the salad with the brownies…but truly, odd as it sounds, strawberries and spinach are a great sweet/sour combination. And 2 salads does seem odd but somehow made sense and they ate them up!</p>

<p>I haven’t thrown strawberries in a salad, but mangos are fantastic. I also like blueberries and/or oranges.</p>

<p>Here is a yummy salad with strawberries recipe although I have been accused of serving a dessert instead of a salad:</p>

<p>greens (spinach, lettuce, whatever you want, nothing bitter), sliced strawberries, drained canned mandarin oranges</p>

<p>dressing – an envelope of Good Seasons Italian dressing, prepare according to package with oil but substitute orange juice for vinegar and water</p>

<p>toss the salad with about half a bag of Heath Bits of Brickle which you find by the chocolate chips. Do not get the kind with chocolate in it.</p>

<p>This salad gets rave reviews.</p>
