I’m posting this here because frankly I don’t know what forum is appropriate for this question.

Let’s say that I was a freshman at another University that is not Stanford, say, a UC.
If I went to the Stanford Campus and sat in on their classes, did all of the coursework, got grades, and gathered enough credits for graduation, is it possible graduate from Stanford instead of the UC that I am officially enrolled in?

No. You have to be enrolled in a college as a degree-seeking student to receive a degree from that college. The only way something like this would make sense is if that UC had an agreement with Stanford that UC students could cross-register at Stanford, but you would still receive a degree from UC, you would only be taking some classes at Stanford. If colleges operated under the system you suggest, they would be handing out so many free diplomas that a degree from Stanford or Harvard or any other top-tier school wouldn’t be as significant as it is today. No college would want that.
